Aroma

Ginger, mixed spice and poached pears.

Palate

Flavors of fresh ginger and red apples. Delicate with a persistence that leaves you with a drying finish.

Vintage

An excellent flowering period and consistent rainfall resulted in even crops and healthy canopies. As a result, our start date was later, giving the fruit extra ‘hang time’ to develop more flavours across all varieties

Winemaking

This was off our third pick of pinot gris for the harvest and went straight into a half ton open top fermenter. This was fermented on skins for 14 days, native yeast and gentle punch downs daily. It was then pressed off and put into a puncheon and aged on light lees for 4 months until bottling.
